As the lectin-reduction trend moves from strictly "no-lectin" to a less restrictive "low-lectin" approach, millions of new people are trying it.
Plant Paradox guru and best-selling author Steven R. Gundry, MD, calls author Claudia Curici "the leader in empowering a low-lectin lifestyle." Curici, the first low-lectin food blogger and still the most popular, focuses in her second book on quick and easy weekday meals for home cooks with busy lives.
She includes a number of recipes for the Instant Pot or other electric pressure cookers. There are plenty of recipes, too, for fancy weekend meals for company. Millions of people around the world have adopted a lectin-elimination diet to get rid of toxins in their GI tract, lose weight, enhance nutrient absorption, and improve mood.
In the past two years, what had been a "no-lectin" diet has evolved into a "low-lectin" diet. This timely book rides that wave with more than 100 creative and delicious low-lectin recipes.
Everyday Low-Lectin Cookbook is a must-have for anyone looking to enjoy the benefits of a low-lectin lifestyle without compromising on taste and creativity in their meals.
