Ever-Green Vietnamese by Andrea Nguyen brings plant-based cooking together with the dynamic flavours of Vietnamese cuisine through 125+ recipes and variations. This collection comes from the James Beard Award-winning author of Vietnamese Food Every Day.

JAMES BEARD AWARD FINALIST . IACP AWARD FINALIST

Named a Best Cookbook of the Year by The New York Times, Los Angeles Times, Food Network, Good Housekeeping, San Francisco Chronicle, and Epicurious, this book challenges the perception of Vietnamese cooking as just beefy pho and meat-filled sandwiches. Traditional Vietnamese cooking has long embraced plants and seafood, with modest amounts of meat. In Ever-Green Vietnamese, Nguyen illustrates how Vietnamese cooks use their natural resourcefulness and Buddhist traditions to highlight herbs and vegetables in flavourful, comforting recipes.

The book is filled with Nguyen's brilliant advice and exceptional teaching, offering recipes for flavour-boosting condiments and sauces, such as her remarkable DIY vegan fish sauce. It includes exciting ways to enjoy tofu, along with dozens of vegetable-driven sides and mains, some even incorporating a bit of meat, with many vegetarian or vegan options.

Home cooks will delight in Nguyen's innovative recipes for:

  • Favourite snacks, like Smoky Tofu-Nori Wontons and Steamed Veggie Bao
  • Vietnamese classics, such as Fast Vegetarian Pho and Banh Mi with Vegan Mayonnaise and Bologna
  • Simple sides, including Nuoc Cham Cabbage Stir-Fry and Green Mango, Beet, and Herb Salad
  • Wholesome hacks, like Sweet Potato and Shrimp Fritters and Oven-Fried Crispy Shiitake Imperial Rolls

Brimming with cultural context, extensive instruction, and practical cooking tips, Ever-Green Vietnamese is the perfect choice for those wishing to integrate plant-based Vietnamese cooking into their daily lives.
