About the Author
Learning you or a loved one has Celiac disease can be extremely overwhelming. This is what Jennifer Monte learned quickly after her diagnosis. Born in 1980 on Long Island, New York, Jennifer suffered for over 20 years with the symptoms of Celiac disease. Mere months after she was diagnosed, so was her daughter, Lucy at age 8. Not wanting her daughter to grow up missing out on all of the great food and experiences as well as not wanting her to suffer the way that she had growing up, Jennifer decided to do something about it. She researched and learned how to live relatively comfortably with this disease. She created some great recipes and tips to make both of their lives easier. Jennifer then decided to put it on paper to help the ever growing number of people that are diagnosed every day, in hopes to save them the stress and hopelessness that she once felt.
