In the tradition of The Joy of Cooking comes Salt, Fat, Acid, Heat, an ambitious and comprehensive guide to mastering the essentials of cooking by chef and writer Samin Nosrat. Nosrat unlocks the secrets of culinary success by breaking it down into four fundamental elements: Salt, Fat, Acid, and Heat. This revolutionary approach has been honed through years of teaching everyone from professional chefs to middle school students, and even to luminary author Michael Pollan.

As she started her career cooking at the famed Chez Panisse, Nosrat noticed that the chaos of the kitchen was often tamed by these four essential principles. Bringing this insight to her readers, Nosrat explains how:

  • Salt: Enhances flavour
  • Fat: Delivers flavour and creates texture
  • Acid: Balances flavour
  • Heat: Determines the texture of food

Understanding and mastering these elements will empower any cook to create delicious food, no matter the ingredients at hand. With Salt, Fat, Acid, Heat, beginners and experienced cooks alike will learn to make better decisions in the kitchen and transform simple meals into extraordinary culinary experiences.

In this beautifully illustrated book, Nosrat demystifies the science behind these elements, offering a lighthearted yet deeply informative narrative that bridges the gap between home and professional kitchens. The book features illustrated walkthroughs and 150 infographics by the renowned illustrator Wendy MacNaughton, making complex concepts more accessible and engaging for readers.

The charming narrative is complemented by a canon of 100 essential recipes and numerous variations that put Nosrat's teachings into practice. Learn to make bright, balanced vinaigrettes, perfectly caramelised roast vegetables, tender braised meats, and light, flaky pastry doughs. Each recipe is meticulously crafted to teach specific principles, so you gain the skills needed to create your own masterpieces.

Echoing Samin Nosrat's own journey from culinary novice to award-winning chef, Salt, Fat, Acid, Heat is destined to become a classic. It is a map to understanding the fundamentals of cooking, ensuring that it just might be the last cookbook you'll ever need. Whether you're a home cook aiming to elevate your everyday meals or a culinary expert seeking to refine your techniques, this book is your definitive guide to unlocking the secrets of great cooking.
